A cooking class with Wanitha is not like any class you’ve ever experienced.

Classes are held at VictorsFood kitchens in Waterloo, and at The Essential Ingredient in Rozelle and Newcastle. Please choose your class, and you will be redirected to the appropriate website for booking arrangements.

Malaysian Hawker Style Cooking Class

Spice infused amazing Malaysian cooking

Chef Wanitha Tanasingam joins Victor to bring you her spice infused amazing Malaysian cooking. Wanitha alone is worth the class fee as she will teach you how to make some of the great and easy “hawker style” dishes from her native land. Think delicious noodle dishes like char kway teow, sour fish soup with fresh mint and cucumber, and more! Simple stir fries with the punch of chillies, mint, and fish sauce – this will open up your taste buds.

This class is a must for food lovers. One of our regulars, Judy Passlow, said Wanitha’s “infectiously delicious personality and style made the day heaps of fun... The feast we enjoyed together was magnificent.” Every class is a different menu, so even if you’ve been to Malaysian Hawker Style before, you’ll learn something new.

Welcome to the new Street Food series from Wanitha Inc, taking you on a culinary journey to the hawker stalls of far off lands from our Danks St kitchen.

Thai food is addictive and delicious. Learn Thai basics hands-on through her simple, everyday food - satays, papaya salad, pad Thai and more - in this amazing class of Thai street food favourites, taught by Victor from VictorsFood, and Wanitha.

As always, classes are suitable for novices as well as experienced cooks. You help make a number of recipes hands-on, with some demonstration, and an interactive part where knife skills are taught as well as kitchen basics.

Come on a journey to discover the soul of Nonya cooking

Laksa is a hugely popular dish with many variations. Come with Victor and chef Wanitha Tanasingam on a journey to discover the soul food of Nonya (Chinese Malaysian) cuisine. Learn the 2 basic types of laksa and the 3 essential pastes that result from the marriage of Indian, Muslim and Chinese cultures.

Learn to make authentic, amazing Asam Laksa (or Penang Laksa, listed at number 7 on World's 50 most delicious foods complied by CNN Go in 2011), plus seafood combination, mild creamy chicken and spicy vegetarian. Have fun while you learn to blend the spices and herbs to recreate traditional Malaysian flavours. Sarong wearing is permitted - in fact, it's encouraged!

Join Wanitha for a hands-on workshop preparing the Moroccan national delicacy, Couscous, served with Tajine, the very spicy Harissa, and must-have Chermoula.

For dessert, indulge yourself with a serve or three of Date and Kahlua pancakes (pancakes showered in dates stuffed with hazelnuts, drizzled in a caramel sauce flavoured with Kahlua, cinnamon and dates)

Join Tawnya Bahr and Wanitha Tanasingam for this spice inspired market tour with cooking class and discover how regional Australian foods can come alive with a little oriental flare!

Tawnya Bahr works with the local growers and producers, to give you an unforgettable experience and insight into the best of the region. Other tours have featured cooking demonstrations from Tony Bilson, the secrets of handmade sugarcraft from Sweetness the Patisserie and smoking know-how from Brilliant Foods.

Your Day: Meet at the Essential cafe at 8:00am for a coffee, before heading off in Private transport to the growers market. Join Tawnya at the markets where you'll speak to local growers as you source and sample the very best ingredients on offer, then join Wanitha in the kitchen as she teaches you to weave spices from Sri Lanka , Thailand, Malaysia and India to bring out the wow to your meals.
